Pumpkin Hummus


Here's a great recipe that both you and your little one (9 months and beyond) can eat and enjoy together.

Ingredients:

2 cups of pre-soaked and cooked organic chickpeas (soak for 24 hours then cook until soft – approx. 1 hour)
3 cloves of garlic (or to taste)
1 cup of pumpkin puree
2 tsp lime juice
1 tsp green curry paste, optional
Pinch of unrefined sea salt
¼ to ½ tsp. cinnamon
2 tbsp of olive oil

Method:

1. Put all ingredients in blender and blend.
2. Add the following as toppings (optional):
2 tbsp chopped cranberries
1 tbsp chopped walnuts
1 tbsp chopped parsley, as garnish

Can serve in a hollowed out small pumpkin or squash.
